How to cook 'mücver'? Let's learn together!


Hi all! How are you? I hope everthing is good J I wanna introduce myself first. My name is Ertuğ and i’m 29 years old. I’m from western of Turkey, in Çanakkale city. Actually not count because i was living Kilitbahir village of Çanakkale. Kilitbahir is located European side of Turkey. Anyway, we can pass this topic because it’s a long story! And also it will be long for you J

Well, i’m a author, musician, traveller and camper. Actually i graduated tourism and hotels high school as bartender. I worked that job a lot of years but then i leaved. It’s not a private for me, that’s why i can explain why. Frankly, i boooored, really bored! Maybe looks good if you watching from away but if you working a hotel; it’s not a good job. Misunderstand me please, i wasn’t bored my job, i bored my chefs and directors. A lot of directors are saying ‘work, work more’ if you working a hotel as that position! You are already working hard but it’s never enough for your chefs. Oh, sorry for my situation, i talked a lot again and i extend. J Hey Ertuğ! That’s at man, let’s come back to your subject!

Yeah guys! Here i am another recipe of Turkish cuisine in this article. Don’t worry, it will be an easy recipe for you again. Oh, i almost forget; if you didn’t read my menemen recipe, please you read that article also(I’ll share that page link end of the this article). What we’re saying? Ah, well; it will be easy recipe for you. J You need only 9 easy foods for your delicious dish!

You don’t like zucchini or you love zucchini? Whatever your answer, so every result will be benefit to your chooses. Because if you don’t like zucchini; you can like after that dish. It will be different, nutritious and tasty! If you are looking for different and new tastes, it will be really good idea for you. In your breakfasts, at certain times of the day and even as a side of your dinner; it’s an excellent recipe that you can eat hot and cold. Turkish people are eating this meal generally; breakfast, eaten with tea, as a aperatif in dinner and as a snack. That's why this meal is really important for Turks. 

It will be first kitchen job of your life or if you are going to kitchen for the first time; don’t worry also! I’ll show step by step every part with pics for you! J I hope you’re relax a little bit. J It’s mean you are ready to cook if you have a grater. Let’s take a look around to contents:

‘Mücver’ for 4 people:

* 3 zucchinis (standart size)

* 3 eggs (standart size)

* Flour a half of glass (standart glass it’s 200 ml.)

* 4 green onion

* Parsley (15-20 pieces)

* Dill (30-35 pieces)

* Salt

* Black pepper

* Powdered red chili (if you like spicy):

* 15 minutes for preparing, 15 minutes for cooking this durations*

Alright dear friends! Let’s talking about to preparing to this dish. I talked about to grater, remember? Yeah, now we need this. You’ll grate your zucchinis after washing and peeling. Please don’t rush, take it easy while you’re grating of your zucchinis. Especially be careful to your fingers! It’s very painful if you’re cut fingers on the grater. –I’ve experienced this- After grating to zucchinis, juicing and put them in a big mixing bowl. It’s a key point guys, don’t put your zucchinis without juicing in the bowl!




Well, we added to zucchinis in mixing bowl. Now we can cutting to greens, so green onion, parsley and dill. Another key point guys! We need to cut little and little to greens.



Yeah, we’ve completed to grating and cutting operations! You can be relax, our patient is still alive and it will come back stronger for your stomach! J

We can pass to next process right now! This process about to mixing contents. I told you in enterence to this article guys, ‘we need a big mixing bowl’. That’s why; we will mixing everything in this big bowl. J We will prepare a mortar! Don’t worry, we’re not going to a construction; i’m talking about a meal. J 



Alright, we’re adding to other things in the bowl guys. Order is not so important; eggs, flour, greens, salt and black pepper.-If you like spicy, please don’t forget to add powdered red chili- Yeah, now everything in the big bowl. We can start to mixing with a spoon. Let to everything mix in each other please. Slowly, mixing slowly and BINGO! Our mortar is ready. 



Now we can pass to cook in the pan.

Yeah, right now we need to pan for prepare. It will be better if pan is teflon. A little vegetable oil adding to our pan. It’s ok if you if you have olive oil also. After oil is hot, we can add our mortar with the spoon we mixed.We press a little in the middle of mortar that we put in the pan with the whole spoon. Then we’re cooking to both sides of our mortar. 



After both sides of the mortar fried, we’re take them to a plate lined with paper towel! Key points again guys! Paper towel. Why we’re doing this you know? Because we cooked our mücvers in the pan with oil. In this reason; our mücvers still have oil. Paper towel help us to take them excess oil.



Also you can use this tactic for your all vegetables fried; potatoes, eggplants, peppers and etc. You’ll see and realized to be better. J

Well, now we can talk about serve of our mücvers. However you want guys, you can eat these meal hot or cold! I suggest you eat hot, if you ask my prefer.
